Ingredients
1 pre-made pie crust
2 large eggs
1 cup milk
1 cup salsa
1 cup shredded cheese (cheddar or Mexican blend)
1/2 cup diced bell peppers
1/2 cup diced onions
1/2 teaspoon garlic powder
1/2 teaspoon cumin
Salt and pepper to taste
Fresh cilantro for garnish
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a large bowl, whisk together the eggs, milk, garlic powder, cumin, salt, and pepper.
3. Stir in the salsa, bell peppers, onions, and half of the cheese.
4. Pour the mixture into the pie crust.
5. Sprinkle the remaining cheese on top.
6. Bake for 30-35 minutes or until the center is set and the top is golden brown.
7. Remove from the oven and let cool for 5 minutes before slicing.
8. Garnish with fresh cilantro before serving.
