Description
Crisp-edged, tender zucchini fritters made with Parmesan, green onion, and simple seasonings, then cooked in the air fryer with only a light coating of oil.
Ingredients
2 medium zucchini
Salt, for draining the zucchini
1 large egg
1/2 cup finely grated Parmesan cheese
1/3 cup all-purpose flour
2 tablespoons sliced green onion
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Cooking spray
Instructions
1. Grate the zucchini using the large holes of a box grater.
2. Toss lightly with salt and let stand for about 10 minutes.
3. Place the zucchini in a clean kitchen towel and squeeze firmly until very little moisture remains.
4. Combine zucchini, egg, Parmesan, flour, green onion, garlic powder, onion powder, and black pepper.
5. Divide into 8 portions and shape into approximately 3-inch patties.
6. Preheat the air fryer to 375°F if recommended for your model.
7. Lightly spray the basket and fritters with cooking spray.
8. Arrange fritters in a single layer without overlapping.
9. Air-fry for about 14 minutes, flipping halfway through.
10. Cook until deeply golden in spots, firm enough to lift easily, and tender rather than wet in the center.
Notes
Squeeze the zucchini thoroughly for the crispest texture.
Work in batches if necessary.
Avoid adding excessive flour, which can make the fritters dense.
Air-fryer cooking times vary; add 1–2 minutes when necessary.
Refrigerate cooked fritters in a covered container and use within 3–4 days.
For freezing, cool completely, freeze in a single layer until firm, then transfer to a freezer-safe container with parchment between layers.
Reheat in the air fryer at approximately 350°F until hot and crisp.
