Description
Moist and tender Apple Cinnamon Muffins filled with finely diced apples, brown sugar, vanilla, and warm cinnamon. These easy homemade muffins have golden tops and soft apple pieces in every bite.
Ingredients
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, melted and slightly cooled
3/4 cup packed light brown sugar
1/4 cup granulated sugar
2 large eggs
3/4 cup buttermilk
2 teaspoons vanilla extract
1 1/2 cups finely diced apples
Coarse sugar or cinnamon sugar for topping, optional
Instructions
1. Preheat the oven to 400°F. Line a standard 12-cup muffin pan with paper liners or lightly grease the wells.
2. In a large bowl, whisk together the all-purpose flour, cinnamon, baking powder, baking soda, and salt.
3. In a separate bowl, whisk the melted and slightly cooled butter with the brown sugar and granulated sugar.
4. Whisk in the eggs one at a time, followed by the buttermilk and vanilla extract.
5. Pour the wet mixture into the dry ingredients. Fold gently until only a few streaks of flour remain.
6. Add the finely diced apples and fold just until the apples are evenly distributed and no dry flour remains. Do not overmix.
7. Divide the batter evenly among the 12 muffin wells, filling each almost to the top.
8. Sprinkle the tops lightly with coarse sugar or cinnamon sugar, if desired.
9. Bake at 400°F for 5 minutes.
10. Without opening the oven door, reduce the oven temperature to 375°F and continue baking for 13 to 17 minutes.
11. Check for doneness. The muffins should have rounded golden tops, the centers should spring back gently when touched, and a tester should come out with a few moist crumbs but no wet batter.
12. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack.
Notes
Cut the apples into pieces approximately 1/4 inch wide so they soften during baking.
Firm apples such as Granny Smith, Honeycrisp, Braeburn, or Pink Lady work well.
Measure the flour by spooning it into the measuring cup and leveling the top to avoid dense muffins.
The melted butter should be warm rather than hot before the eggs are added.
Fold the batter only until the flour disappears. Overmixing can create chewy or dense muffins.
Store cooled muffins in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
Freeze individually wrapped muffins in a freezer-safe container for up to 3 months.
Reheat one muffin in the microwave for 10 to 15 seconds or in a 300°F oven for 5 to 8 minutes.
