Description

A moist, cocoa-rich chocolate quick bread made with shredded zucchini, Greek yogurt, neutral oil, and semisweet chocolate chips. The zucchini keeps the crumb tender without adding a strong vegetable flavor.


Ingredients

1¼ cups (150 g) all-purpose flour

½ cup (42 g) natural unsweetened cocoa powder

¾ teaspoon baking soda

½ teaspoon baking powder

½ teaspoon fine salt

½ teaspoon espresso powder, optional

2 large eggs

¾ cup (150 g) granulated sugar

⅓ cup (80 ml) neutral vegetable oil

⅓ cup (80 g) plain 2% Greek yogurt

2 teaspoons vanilla extract

1½ cups (180 g) freshly shredded zucchini

¾ cup (128 g) semisweet chocolate chips, divided


Instructions

1. Preheat the oven to 350°F. Grease a 9×5-inch loaf pan and line the long sides with parchment paper, leaving enough overhang to lift out the loaf.

2. Whisk the all-purpose flour, cocoa powder, baking soda, baking powder, salt, and optional espresso powder in a medium bowl. Break up any cocoa lumps.

3. In a large bowl, whisk the eggs and granulated sugar until smooth. Whisk in the neutral oil, Greek yogurt, and vanilla extract until glossy.

4. Fold the dry ingredients into the wet ingredients until only a few flour streaks remain. Do not beat or overmix the batter.

5. Fold in the shredded zucchini and approximately two-thirds of the semisweet chocolate chips. The batter should be thick but scoopable.

6. Spread the batter evenly in the prepared loaf pan. Sprinkle the remaining chocolate chips over the top.

7. Bake for 50–60 minutes, checking at 48 minutes. The loaf is ready when the top is set, the center springs back lightly, and a tester inserted away from a chocolate chip shows moist crumbs but no wet batter.

8. Cool the loaf in the pan for 15 minutes. Lift it onto a wire rack and cool for at least 1 hour before slicing.


Notes

Measure the zucchini after shredding.

Use the medium holes of a box grater for the best texture.

Do not squeeze ordinary fresh zucchini completely dry.

Blot the zucchini only when the shreds are actively dripping.

Avoid overmixing after adding the flour.

Check the loaf in two places because melted chocolate can resemble wet batter.

Cover the top loosely with foil if it darkens before the center is fully baked.

Do not taste uncooked batter because raw flour and eggs may contain harmful bacteria.

Store the cooled loaf in an airtight container in the refrigerator for up to 5 days.

Wrap the cooled loaf or individual slices tightly and freeze for up to 3 months.
