Description

Crisp buttermilk waffles brushed with melted butter and coated in cinnamon sugar for an easy churro-inspired breakfast, brunch, or dessert.

Ingredients

Scale

Waffle Batter

2 cups all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon fine salt

1 teaspoon ground cinnamon

2 large eggs

1 3/4 cups buttermilk

6 tablespoons unsalted butter, melted and slightly cooled

1 teaspoon vanilla extract

Butter or cooking spray for the waffle iron, if needed

Cinnamon-Sugar Coating

1/2 cup granulated sugar

2 teaspoons ground cinnamon

4 tablespoons unsalted butter, melted

Instructions

1. Preheat the waffle iron to medium or medium-high. Place a wire cooling rack nearby.

2. Combine 1/2 cup granulated sugar and 2 teaspoons ground cinnamon in a shallow bowl. Keep the 4 tablespoons of melted butter nearby.

3. Whisk the flour, 2 tablespoons sugar, baking powder, baking soda, salt, and 1 teaspoon cinnamon together in a large mixing bowl.

4. In a second bowl, whisk the eggs, buttermilk, 6 tablespoons melted butter, and vanilla extract until combined.

5. Fold the wet ingredients into the dry ingredients just until no large dry flour pockets remain. Small lumps are fine; do not overmix.

6. Lightly grease the waffle iron with butter or cooking spray if required by the manufacturer.

7. Add the appropriate amount of batter for your waffle iron and cook for approximately 3 to 5 minutes.

8. Remove the waffle when it is deep golden, releases easily, and produces very little remaining steam.

9. Brush both sides of the warm waffle lightly with melted butter, then coat with the cinnamon-sugar mixture.

10. Repeat with the remaining batter and serve promptly for the crispest texture.

Notes

Do not taste uncooked batter because it contains raw flour and eggs.

Avoid stacking finished waffles because trapped steam will soften the crisp ridges.

Keep plain cooked waffles warm on a wire rack in a 200°F oven while preparing additional batches.

Different waffle irons require different amounts of batter, so follow the capacity recommended by the manufacturer.

Apply the cinnamon-sugar coating shortly before serving for the best texture.

Cool leftovers completely before storing.

Refrigerate leftovers in an airtight container for up to 3 days.

Freeze uncoated waffles for up to 2 months for best quality.

Reheat in a toaster or a 350°F oven until hot and crisp, then apply fresh butter and cinnamon sugar.
