Description
Oversized blue cookies packed with chocolate chips and crunchy cookie pieces, with a whole chocolate sandwich cookie hidden inside each soft, chewy center.
Ingredients
140 g unsalted butter, softened
100 g granulated sugar
100 g light brown sugar, packed
1 large egg
2 teaspoons vanilla extract
Blue gel food coloring, as needed
265 g all-purpose flour
¾ teaspoon baking soda
¾ teaspoon salt
½ cup mixed semisweet and white chocolate chips
14 chocolate sandwich cookies, divided
½ cup chopped crisp chocolate-chip cookies
Instructions
1. Heat oven to 350°F and line two baking sheets with parchment.
2. Keep 10 sandwich cookies whole. Roughly chop the remaining four and the crisp chocolate-chip cookies.
3. Beat softened butter with both sugars for about 2 minutes until creamy and slightly fluffy.
4. Beat in the egg, vanilla, and blue gel coloring.
5. Mix in flour, baking soda, and salt just until combined.
6. Fold in chocolate chips and chopped cookies.
7. Divide dough into 10 portions.
8. Flatten each portion, place one whole sandwich cookie in the center, and completely seal the dough around it.
9. Space four or five cookies on each baking sheet.
10. Bake for 8–10 minutes until the tops and edges are set but the centers remain soft.
11. Cool on the pan for about 10 minutes before transferring to a rack.
Notes
Use gel food coloring for stronger blue color without adding excessive liquid.
Softened butter should hold its shape and should not look melted or greasy.
Chill very soft shaped dough for 20–30 minutes before baking.
Avoid overmixing once the flour has been added.
Do not taste raw cookie dough because it contains uncooked flour and egg.
