Ingredients
8 slices bacon
8 ounces cream cheese, softened
1/2 cup sour cream
1/3 cup mayonnaise
1 tablespoon ranch seasoning
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
2 (15-ounce) cans sweet corn, thoroughly drained
1 cup shredded sharp cheddar cheese
1 cup cherry tomatoes, finely chopped and divided
1 cup finely chopped romaine lettuce, divided
3 green onions, thinly sliced
Corn chips, crackers, or vegetables, for serving
Instructions
1. Cook bacon until crisp. Drain, cool completely, and crumble.
2. Beat cream cheese, sour cream, and mayonnaise in a large bowl until smooth. Mix in ranch seasoning, garlic powder, and pepper.
3. Fold in corn, cheddar, three-quarters of the bacon, three-quarters of the tomatoes, half the lettuce, and green onions.
4. Transfer to a serving bowl, cover, and chill for 30 minutes.
5. Top with remaining bacon, tomatoes, and lettuce. Serve chilled with sturdy chips, crackers, or vegetables.
Notes
Drain corn very well and add the fresh garnish shortly before serving.
For make-ahead prep, refrigerate the base up to 24 hours and keep bacon, tomato, and lettuce separate.
Store leftovers in an airtight container in the refrigerator; the dip is best within 2 days.
