Description
Golden pan-fried zucchini fritters with crisp edges, a tender vegetable center, Parmesan, scallions, garlic, and fresh parsley.
Ingredients
2 medium zucchini, about 1 pound total
1 teaspoon kosher salt
1 large egg
1/3 cup finely grated Parmesan cheese
1/3 cup all-purpose flour
2 scallions, thinly sliced
2 tablespoons chopped fresh parsley
1 small garlic clove, finely minced or grated
1/4 teaspoon freshly ground black pepper
1/4 teaspoon baking powder
2–3 tablespoons olive, avocado, or neutral cooking oil for frying
Instructions
1. Coarsely grate the zucchini and toss with kosher salt. Place in a colander and rest for 10 minutes.
2. Transfer to a clean kitchen towel and squeeze firmly until very little liquid remains.
3. Add zucchini to a bowl with the egg, Parmesan, flour, scallions, parsley, garlic, black pepper, and baking powder.
4. Stir just until the mixture is evenly combined.
5. Heat enough oil to lightly coat a large skillet over medium to medium-high heat.
6. Scoop approximately 3 tablespoons of batter per fritter into the skillet and flatten to about 1/2 inch thick.
7. Cook for 3–4 minutes on the first side until deeply golden.
8. Flip and cook for another 2–3 minutes until golden and set through.
9. Egg-containing dishes should reach 160°F according to FDA guidance.
10. Transfer to a rack or paper towel and repeat with the remaining mixture.
Notes
Squeeze the zucchini very thoroughly for the crispiest texture.
Avoid adding excessive flour; it can make the fritters dense.
Do not overcrowd the skillet.
Adjust skillet heat if the exterior browns too quickly.
A 1:1 gluten-free flour blend can replace all-purpose flour.
Refrigerate leftovers promptly in a covered container for up to 3–4 days.
Cool completely before freezing, then freeze in a single layer and transfer to a freezer-safe container with parchment between layers.
Reheat in a 375°F oven or air fryer until crisp and heated through.
