Description

Moist Double Chocolate Zucchini Muffins made with cocoa powder, finely shredded zucchini, Greek yogurt, and semisweet chocolate chips. The easy batter creates soft, tender muffins with rich chocolate flavor and melted chocolate pockets.

1 1/2 cups all-purpose flour

1/2 cup natural unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon espresso powder, optional

2 large eggs

3/4 cup granulated sugar

1/4 cup packed light brown sugar

1/2 cup neutral oil

1/3 cup plain Greek yogurt or sour cream

2 teaspoons vanilla extract

1 1/2 cups finely shredded zucchini, lightly pressed

1 cup semisweet chocolate chips, divided


Instructions

1. Preheat the oven to 375°F. Line a standard 12-well muffin pan with paper liners or grease the wells lightly.

2. Finely shred the zucchini. Press it gently once or twice in a clean kitchen towel, leaving it damp rather than completely dry.

3. Whisk the flour, cocoa powder, baking soda, baking powder, salt, and optional espresso powder in a medium bowl until evenly combined and free of cocoa lumps.

4. In a separate large bowl, whisk the eggs, granulated sugar, and brown sugar. Add the neutral oil, Greek yogurt, and vanilla, then whisk until smooth and glossy.

5. Fold the dry ingredients into the wet ingredients until only a few flour streaks remain.

6. Fold in the shredded zucchini and 3/4 cup of the chocolate chips. Stop mixing as soon as the batter is evenly combined.

7. Divide the thick batter evenly among the 12 prepared muffin wells. Sprinkle the remaining 1/4 cup chocolate chips over the tops.

8. Bake for 18 to 22 minutes. The muffin tops should spring back gently, and a tester inserted away from a chocolate chip should come out with moist crumbs but no liquid batter.

9. Let the muffins rest in the pan for 5 minutes, then transfer them to a wire cooling rack.


Notes

Do not wring the shredded zucchini completely dry. Its remaining moisture helps create a tender crumb.

Measure the flour by spooning it into the measuring cup and leveling the top.

Avoid overmixing after adding the flour, or the muffins may become dense or rubbery.

Insert the tester away from melted chocolate chips when checking for doneness.

Do not taste the raw batter because it contains uncooked flour and eggs.

Store cooled muffins in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.

Freeze cooled muffins in an airtight freezer bag for 2 to 3 months. Thaw before reheating.

Warm one thawed muffin in the microwave for 10 to 15 seconds.
