Description

A thick, savory one-pot chili made with lean ground turkey, pumpkin purée, black beans, fire-roasted tomatoes, bell pepper, and smoky warming spices.


Ingredients

1 tablespoon olive oil

1 medium yellow onion, diced

1 red bell pepper, diced

3 garlic cloves, minced

pounds 93% lean ground turkey

2 tablespoons chili powder

2 teaspoons ground cumin

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon ground cinnamon

¾ teaspoon kosher salt

¼ teaspoon black pepper

1 can (15 ounces) pure pumpkin purée

1 can (14.5 ounces) fire-roasted diced tomatoes

1 can (15 ounces) black beans, rinsed and drained

1½ cups reduced-sodium chicken broth


Instructions

1. Heat olive oil in a large Dutch oven over medium heat.

2. Add onion and bell pepper. Cook about 5 minutes, until beginning to soften.

3. Add ground turkey and cook over medium-high heat for 6–8 minutes, breaking it into crumbles. Cook until no raw pink areas remain and the turkey reaches 165°F.

4. Stir in garlic, chili powder, cumin, smoked paprika, oregano, cinnamon, salt, and black pepper. Cook for 30 seconds.

5. Add pumpkin purée, fire-roasted tomatoes, black beans, and chicken broth. Stir until smooth and evenly combined.

6. Bring to a gentle simmer, reduce heat to low, and cook uncovered for 15–18 minutes, stirring occasionally.

7. Add a little broth if the chili is too thick or simmer a few minutes longer if it is too thin.

8. Taste and adjust seasoning before serving.


Notes

Use pure pumpkin purée rather than pumpkin pie filling.

Ground chicken may replace ground turkey.

Pinto beans may replace black beans.

Add cayenne or chipotle for extra heat.

The chili thickens further as it cools.

Refrigerate cooled chili in shallow airtight containers for up to 3–4 days.

Freeze cooled portions in freezer-safe containers for up to 3–4 months for best practical use and quality.

Reheat gently on the stovetop or in the microwave, adding a splash of broth if needed, until leftovers reach 165°F.
