Description

Creamy tuna salad and sharp cheddar are folded into flour tortillas and skillet-toasted until crisp, golden, and completely melted inside.


Ingredients

Two 5-ounce cans light tuna packed in water, thoroughly drained

¼ cup mayonnaise

1 tablespoon Dijon mustard

⅓ cup finely diced celery

2 tablespoons finely diced red onion

2 tablespoons dill relish

1 teaspoon fresh lemon juice

¼ teaspoon ground black pepper

1 cup shredded sharp cheddar cheese

Four 10-inch flour tortillas

2 teaspoons butter or neutral cooking oil


Instructions

1. Drain the tuna thoroughly in a fine-mesh strainer, transfer it to a medium bowl, and break up any large pieces with a fork.

2. Add the mayonnaise, Dijon mustard, celery, red onion, dill relish, lemon juice, and black pepper. Stir just until evenly combined.

3. Warm each tortilla for about 10 seconds in the microwave or briefly in a dry skillet until flexible.

4. Place ¼ cup shredded cheddar slightly below the center of each tortilla.

5. Divide the tuna mixture evenly among the tortillas, placing it over the cheese and leaving at least a 1½-inch border.

6. Fold the left and right sides inward, bring the bottom edge over the filling, and roll firmly toward the top.

7. Heat ½ teaspoon butter or oil in a nonstick skillet over medium-low heat.

8. Place two wraps seam-side down in the skillet, cover, and cook for 2 to 3 minutes.

9. Turn the wraps carefully and cook for about 2 more minutes, until the tortillas are golden and the cheese is melted. Repeat with the remaining wraps.

10. Rest the wraps for 2 minutes before cutting and serving.


Notes

Drain the tuna thoroughly to prevent the tortillas from becoming soggy.

Do not overfill the wraps or they may open during cooking.

Use medium-low heat so the cheese melts before the tortillas become too dark.

Warm the tortillas before folding to help prevent cracking.

Taste the tuna filling before adding salt because the tuna, cheese, relish, and tortillas already contain sodium.

Freshly shredded cheddar generally melts more smoothly than pre-shredded cheese.
